This hearty, nourishing bake is crammed full of juicy vegetables, layered with pasta and our incredible ‘I can’t believe it’s not cheese’ cashew and tofu ricotta. Any leftovers will keep well in the fridge for up to 3 days.
This lasagne can be made in advance: once assembled, it will keep in the fridge for up to 3 days. If cooking from chilled, bake for an extra 10–15 minutes. Once assembled, the uncooked lasagne can also be frozen — make sure to defrost thoroughly before baking as usual.
