These classic American cookies are crisp on the outside, chewy in the middle and traditionally coated in cinnamon, making them a totally irresistible festive treat.

Ingredients:

    for the cookies
  • 150g coconut oil

    melted & cooled slightly

  • 150g coconut sugar

  • ½ tablespoon vanilla extract

  • 225g plain white flour

  • 1 teaspoon cream of tartar

  • ½ teaspoon bicarbonate of soda

  • 1 tablespoon oat milk

  • pinch of sea salt

    for the coating
  • 2 tablespoons coconut sugar

  • 1 tablespoon ground cinnamon

Method:

    Mix the melted coconut oil, sugar and vanilla extract together until combined. Add the flour, cream of tartar, bicarbonate of soda, milk and a pinch of salt. Stir until everything is combined and you have a rough dough.

    Preheat oven to 200°C / 180°C fan / 400°F. Roll the dough into the size of golf balls (around 30g); press the balls down slightly to form puck-shaped cookies.

    For the coating, put the coconut sugar and cinnamon into a bowl and toss to combine. Line a large flat baking tray with baking parchment. Toss the cookies in the cinnamon sugar and arrange them on the baking tray, spaced slightly apart as they will spread when cooking.

    Bake for 8–10 minutes until slightly cracked, golden and soft on the inside. Leave to cool completely on the tray before eating.
