We developed this loaf as a ‘ready meal’ - something that would be filling and delicious and a vehicle for any other bits you feel like having. We serve it for breakfast with sauteed tomatoes and spinach, then have some for lunch with a variety of side salads. It also makes the perfect accompaniment to a bowl of soup.
As this mix contains vegetables it is quite wet. Make sure they are thoroughly defrosted and drained to avoid adding too much moisture. Also be sure that your oven is completely preheated or it may affect the end result.
