We made this for a special Mexican themed newsletter and it was such a hit in the office! It has a simple mix of flavours; the coriander, chilli and lime juice really stand out, bringing the courgettes to life. We serve these with mountains of guacamole and our sweet & spicy mango salsa, followed by our black bean cookies.
