Blueberry Compote

This simple blueberry compote is a quick and easy way to add some colour and sweetness to your breakfast. We often make a batch at the weekend and add it to porridge, yoghurt or spread on toast throughout the week.

Ingredients:

    Ingredients
  • 400g blueberries

  • 6 tablespoons maple syrup

  • ½ lemons

    juiced

Method:

    Place all of the ingredients into a small pan over a medium-low heat and cook for 10 minutes, stirring often, until the blueberries have burst, reduced and turned juicy.

    Mash the blueberries using a fork or masher, until you have a smooth mix with some small pieces remaining. Cook for 5 more minutes before removing from the heat and leaving to cool. Store in a jar in the fridge for up to 5 days.
