Spiced Spinach & Potato Cakes

We love these Spiced Spinach & Potato Cakes. To make the cakes we sauté cumin, paprika, cayenne pepper and turmeric with onion and garlic, then mash the mix of hot spices into the potatoes and stir through the spinach. They’re made in small batches, before being quickly frozen to lock in the delicious flavours. All you need to do is pop them in the oven from frozen and they will be ready in 25 minutes. We love serving these with pan-fried garlicky tomatoes and roasted broccoli to create a delicious dinner for two.
