Spiced Apple and Cranberry Cabbage

Cooking Christmas dinner can be quite stressful as there are always so many different things to prep, chop, bake and stop form burning! So I thought it would be nice to give you a delicious side dish that was stress free, meaning you have one less thing to worry about! It takes about five minutes to prepare the ingredients for this recipe, and then you just throw them all in a big saucepan to cook. You don’t need to worry about this burning or not setting right, so it won’t stress you out and you can focus on your other dishes instead – plus it’s so delicious!

1 medium red cabbage (600g)

2 apples (200g)

100g of dried cranberries (1/2 cup)

2 tablespoons of coconut sugar

2 tablespoons of date syrup

3 tablespoons of apple cider vinegar

2 teaspoons of cinnamon

2 teaspoons of nutmeg

salt and pepper


Pre-heat the oven to 200C, fan setting

Slice the cabbage very thinly and chop the apples into small chunks. Mix all the ingredients together in an oven proof baking pot, cover and then place into the oven to bake for 1 hour stirring occasionally.
