Overnight Honey Oats

Oats are one of my all time favourite foods! They’re so delicious, so versatile and so inexpensive, which is why we used them so much in our organic challenge last week. They’re also the best breakfast ingredient as they work really well when soaked overnight, so in the morning you can just grab your breakfast and go without worrying about getting up early to cook something healthy. These oats are wonderfully simple and just require three ingredients – oats, honey and oat milk (although you can use any plant based milk). Despite being so simple they’re so delicious and at the moment it’s my absolute favourite breakfast! If you want to spice them up try adding fresh berries, banana slices and some toasted nuts as toppings.
100g of oats
1 and a 1/2 tablespoons of honey
150ml of oat milk (the recipe for this is in the book, but you can also use any other plant based milk)
Simply mix all the ingredients together in a bowl. Then transfer them into two jars, add air tight lids and store the jars in the fridge overnight.
In the morning add a small handful of sultanas and one banana for each jar, plus any other toppings you have in the kitchen!
