Warming Bowl

I find February the toughest month of the year, it’s always just quite cold and I seem to spend the whole month just longing for spring, which sadly still feels a long way off! To brighten up the month though I focus on making delicious, warming meals that I know will keep me happy and this warming bowl is the cure to all February blues! It’s full of delicious flavours from the quinoa to the spinach, mushrooms, peas and squash which are all then drizzled in the best almond butter dressing. The dressing is dangerously good – it’s so thick and creamy, and tastes so good on its own that you may eat it just with a spoon the first time you make it!

Serves 1

– 1/3 of a cup of quinoa (60g)

– 1 small bag of spinach (100g)

– 8 chestnut mushrooms

– 1/2 a cup of frozen peas (100g)

– 1/2 a butternut squash

For the dressing

– 2 tablespoons of olive oil

– 2 tablespoons of water

– 1 tablespoon of almond butter

– 1/2 a lemon

– salt and pepper

Start by chopping the squash into small cubes, place these in a steamer and let them steam for about twenty minutes, until they’re really soft

While the squash cooks make the quinoa, simply place it in a pan of boiling water (you need double the amount of water to quinoa) – this should take about fifteen minutes to cook. Five minutes before the end add the peas and let them cook with the quinoa

Slice the mushrooms into thin pieces and put these in the steamer too with the spinach and let them wilt

Make the dressing by simply mixing all the ingredients together in a cup

Finally assemble everything in a bowl and pour the dressing over the top!
