Guest Recipe: Nordic Spiced Porridge

I’m so excited to share one of Alex form 26 Grain’s porridge recipes with you as she’s really the porridge queen! She makes the absolute best porridge you’ll ever eat and this recipe is no exception. We served it at the yoga brunch we held together a few weeks ago and it was such a hit, so if anyone from that event is wondering how to make the porridge this will show you how. Alex has added a few lines below about her love porridge, which should get you very excited about this bowl of happiness.

I love how in Scandinavia they celebrate grains and come together in the winter to share a bowl of porridge. They call this sense of togetherness and cosiness ‘Hygge’, everything I believe a bowl of porridge to be. In this recipe I’ve used a number of different spices to make the dish interesting and to really warm you up. Note: play around with the quantities of spices and see what you like best, some times I love getting carried away with Ginger or Cardamom.

Serves 1

– 1/2 a cup rolled oats

– 1/2 a cup of nut milk, I love Coconut Milk or Almond Milk

– 1/2 a cup of water

– 1/8 teaspoon of Cinnamon

– 1/8 teaspoon of Vanilla

– 1/8 teaspoon of Ground Cardamon

– 1/8 teaspoon of Ginger

– 1/8 teaspoon of Turmeric

– 1 teaspoon of Flaxseeds

– 1 teaspoon of Raisins

– 1 teaspoon of Maca

– 1 teaspoon of maple syrup

– 1 shaved apple

– coconut yoghurt

– a pinch of salt

Mix the oats, nut milk, 1/2 a cup of water and a pinch of salt in a saucepan and start to warm it over a medium heat. Then add in all the spices

Keep stirring the porridge and watch it infuse with the spices for five to ten minutes. Once you’ve got it to the consistency you like, take it off the heat and pour in to a bowl, drizzle with maple syrup and then add the shaved apple, raisins and coconut yoghurt on top.
