Sticky Almond Butter Granola Bars

We were playing around with some recipe ideas using our new granola and ended up making these sticky, chewy granola bars which we’re all a little obsessed with! They’re so gooey and delicious, just so incredibly moorish – once you have one, you’ll want the whole tray. We use our nutty granola for them, but I’m sure any granola would work well. Can’t wait to hear what you think of them…

Difficulty: easy

Ingredients:

480g of granola, 4 cups

100g desiccated coconut, 1 cup

340g of honey or rice syrup, 1 cup

250g of almond butter, 1 cup

Pinch of salt

Method:

Preheat oven to 180c, fan setting.

Start by toasting the coconut in the oven until it becomes slightly coloured and smells delicious. When toasted; mix the coconut in a bowl with the granola, salt and almond butter.

Bring the honey or rice syrup to the boil, then pour over the granola mix and stir everything together until well combined. When combined; push the mixture down into a lined baking tray.

Leave to set in the fridge for a couple of hours, cut into bars and enjoy!
