Crunchy Orange, Coconut and Vanilla Granola

This is my new favourite granola, Iā€™m completely addicted and keep having to remake it as it disappears so quickly! The mix of crunchy coconut chips with pumpkin seeds and toasted oats with maple syrup, vanilla, cinnamon and fresh orange juice is just a dream. I eat this for breakfast either with coconut yoghurt or sprinkled on porridge, smoothie bowls or chia puddings ā€“ it really tastes great with everything!

Ingredients:

400g of jumbo oats

70g of sunflower seeds

4 teaspoons of cinnamon

40g of flaked almonds

60g of toasted coconut chips

1 teaspoon of vanilla powder

90g of coconut oil

100g of raisins

50g of pumpkin seeds

160ml of maple syrup

Squeeze of orange juice

Method:

Pre-heat the oven to 140C (fan).

Heat the coconut oil and maple syrup over a low heat until melted. Remove the pan from heat and add the orange juice, cinnamon and vanilla.

Mix rest of ingredients (apart from the toasted coconut chips and raisins) together in a big mixing bowl and pour over the melted coconut oil and maple syrup.

Spread the mixture evenly on a lined baking tray and bake, stirring every 5 minutes until golden brown (this should take about 45 minutes). Remove the tray from oven and leave to cool. When the granola reaches room temperature, mix in the toasted coconut chips and raisins.
