The Best Hummus

I am seriously obsessed with hummus. It’s a pretty new obsession but a very intense one – I have literally been eating it every day with everything for the last month! I simply can’t get enough. I’ve found my all time favourite hummus from a stall in Borough Market, but since they’re only open three days a week I decided I needed to perfect my own recipe and become self-sufficient. I played with so many different flavours and decided that this batch was my favourite – I love the subtle blend of spicy cumin, tangy lemon, sweet basil leaves and creamy tahini blended with chickpeas, olive oil and water until perfectly smooth. I was caught eating the majority of the batch straight out of the food processor before it could even get to the table! I love how much it complements almost every other flavour too, I’ve been loving it mixed into asparagus salads; used as a dip for sweet potato wedges and crudités; as a creamy sauce for wild rice, pumpkin seed and rocket bowls; and of course eaten straight out of the bowl with a spoon! I hope you love this recipe as much as I do, it’s a great kitchen staple and so easy to make! It’s super healthy too, especially as chickpeas are such a great source of plant protein and fibre.

 Makes one bowl

- 2 cups of soaked chickpeas (I used 2 400g tins to get this amount)

- 5 tablespoons of olive oil

- 4-6 tablespoons of water (depending on how creamy you like it)

- about 10 basil leaves

- The juice of 1 and 1/2 juicy lemons

- 2 teaspoons of tahini

- 1 teaspoon of cumin

- salt to taste

Simple place all of the ingredients into a food processor and blend until smooth, it’s really that easy! Then, if it lasts long enough to have left-overs,  store in an air-tight container in the fridge! Enjoy!

    Hi Ella, I am really interested in changing the way I eat and your post about changing the small things first such as smoothies for breakfast has really inspired me. I have one question which may sound stupid, but do you drink alcohol ever? I only ask because I am currently at university and while I don’t drink excessively, it’s sort of a way of life for a student! I was wondering what your stance is on drinks? Are there even any alcoholic drinks that can be deemed ‘healthy’ in moderation without damaging the body? Thanks xx

      Hi Hattie. I’m really happy to hear that you’re thinking about changing your food lifestyle! Starting with small things is absolutely the best way to do it, and I’m sure you’ll love the smoothies and the way that they make you feel! Your alcohol question isn’t stupid at all! I just graduated from university and it was really hard there as no I don’t really drink, mainly because with my illness it just makes me feel so awful! Saying that though I really don’t think we should never drink, instead I just save it for occasions where it will be really fun instead of drinking at every occasion, if that makes sense? I also would advice sticking to really pure alcohol, I always drink good, ice-cold vodka on the rocks with fresh lemon juice – it’s actually delicious and since it doesn’t contain all the sugar of most other alcohols it is so much better for you!     Hi Ella,
    I am just posting to say that I love the new groovy look of your site. I have not posted before, but as a final year nutrition student, I can empathise with the difficulties of trying to maintain a healthy diet when faced with a hectic routine of work and peer pressures. Although I am in a less common situation of trying to gain weight at the moment, I find that your recipes are very exciting to follow, and also quick, simple, and ultimately deliciously nutritious. I can’t wait to try the new hummus (Definitely high up on my favourite food list), and have been meaning to try the sweet potato brownies for a while too! Currently, I am a bit out of pocket with spending money on more natural based cereal bars (Such as NAKD), so it would be great to try to devise something similar. Fortunately your recipes are helping me to gain new insights into ways of doing this, so hopefully I might be able to find a magical recipe soon :)

      Hi Charlotte. I’m so glad that you like this recipe! Skipping the tahini will change the flavour slightly, but I’ve tried it without and it does still taste great – maybe add a squeeze more lemon to replace it. Hope that helps :)

    This is amazing! The yummiest hommus i’ve ever had! I had actually run out of olive oil and only had a lime infused olive oil which added a bit of extra tang to it! I also mixed a tablespoon of black chia seeds through mine. Amazing!! How long do you think it keeps for in the fridge? I think next time i’ll halve the ingredients it makes heaps!

I’m so addicted to it too – which is probably why I don’t know exactly how long it lasts in the fridge as I seem to eat it all within the first 48 hours! I would imagine though that if stored in an air-tight container it would keep for about 5 days. Hope that helps! Love the idea of adding chia seeds to it too, I must try that – thanks for the great idea :)

    I’m new to your site and am so intrigued! I need everything spelled out for me, so sorry. You soak the chickpeas overnight, and then add the rest of the ingredients in a blender? I don’t need to cook the chickpeas first? Thank you for helping a beginner!

      Hi Carol. Yes you can either buy pre-soaked chickpeas in jars/cans from any supermarket (which I would recommend as it’s easier as you just need to drain them) or you can soak your own overnight. Either way they don’t need cooking. Hope this helps! Enjoy :)

      Hi. Thank you so much, I’m so glad that you love my instagram! I didn’t cook the chickpeas, I used a can of ready-soaked ones but otherwise you can just soak them yourself overnight, so for 6-8 hours. Hope you love the recipe! Have a wonderful weekend :)

    I like what you’ve done with the additional spices; basil is an interesting touch.
    HOWEVER… One cannot simply leave out garlic!
    You don’t need to use much and it boosts the flavour ten-fold. If you’re worried about bad breath, you can find low scented varieties.
    Not to mention all of the fantastic things garlic can do for your health…

    Hi Ella,
    I just found your blog and feel really excited to try some of your wonderful, healthy, colourful and delicious-looking vegan recipes! I bookmarked your page almost immediately! …But I was a bit confused to find this hummus recipe as I really don’t think you can eat raw chick peas. The chick peas that you buy in cans are almost certainly already soaked and cooked, not just soaked overnight as you suggest here. Using canned chick peas like this is absolutely fine, as they are pre-cooked and as you say they are simple and easy to use from a can, but I don’t think it is correct to recommend eating non-cooked chick peas (unless they have been sprouted over a number of days which makes them super healthy, delicious and safe to eat, but that is different from simply soaking them). I am not an expert but just wanted to mention this.

    I just made this recipe along with your guacamole for a family gathering later! I love both, although I did add a clove of garlic to this as I do love garlic. I’ve never made either of these myself and it’s so easy and tasty, and I love how you can adjust the recipe to make more or less depending on what you need. I also love your description of the taste and ingredients before getting down to the cooking!!     Great recipe Ella! Unfortunately I didn’t have any fresh lemon, herbs or tahini so used lemon juice (from concentrate), dried mixed herbs and sesame oil – turned out really well, will definitely try with fresh ingredients next time :)

    Hi Ella, Firstly I’m so glad your health is better with healthy eating!!I’ve had ME/CFS for 13 years and have tried various food ‘diets’ but none have helped. Your idea of eating wholesome nutritious n no rubbish added food sounds great and I’m busy printing out recipes to give it all a try. I was just wondering what tinned chickpeas you use? Only because the one’s I’ve found contain lots of preservatives or sugar and salt. Thanks for trying to help others by posting your recipes and finds.       I buy them from waitrose or buy dried ones and then soak them myself overnight and boil them for an hour x

      I like to vary what I eat from week to week so I don’t have a set shopping list. You can find some plans on the app though and I definitely recommend making big batches of grains and roasted vegetables at the weekend ready for the week.

    If you used 2 tins of chickpeas does that mean you want 3cups in this recipe? (That’s what I find they normally yield) or 4 cups ( what I think cooking 2 cups of dried beans would come to).
