I don’t even know where to start explaining how insanely delicious this is. Oh my god, you have no idea, it is unbelievable. So soft, gooey, sweet, creamy, just wow so delicious.
The beauty of this dish is the way that it is cooked as baking it really allows the fruit to really melt into the oatmeal. The bananas blend so perfectly with the oats and cinnamon, to give each bite a sweet, fruity taste. While the blueberries literally burst in your mouth, like little balls of delicious sweetness! They’re wonderfully complemented by the raisins, which become so big and juicy when baked that they add all the sweetness this dish could ever need. I like to add walnuts too for a little crunch, it’s nice as it spices up the texture a little to give you a bit of everything!
This really is the perfect healthy brunch dish, I promise everyone will love it. It really tastes like dessert! It’s so warming too, which makes it awesome for these cold winter months. I’m even thinking of making it for Christmas morning! You can prepare it the night before and just leave it in the fridge over night too, which means no effort in the morning.
Like everything else I cook this dish is lovely and healthy, of course. It will dose you up on all kinds of goodness! The blueberries and raisins will supply a wonderful amount of anti-oxidants, while the bananas will give you one of nature’s best sources of potassium, which is essential for maintaining normal blood pressure and heart function. If that wasn’t enough the walnuts bring a whole new level of awesomeness to this dish as they’re super high in omega-3 fatty acids, which we all know are amazing for supporting brain function. They’ll keep you beautiful as well as smart too as they’re loaded with vitamin E, the vitamin needed to make your skin glow! Serves 3:
- 1 cup of gluten free oats
- 1 cup of blueberries
- 1 and a 1/2 ripe bananas
- 1/2 a cup of raisins
- 1/4 a cup of almond milk
- a handful of walnuts
- 2 tablespoons of cinnamon
- 1 tablespoon of raw agave syrup (optional)
Start by pre-heating the oven to 190C.
Place the oats in a bowl and cover them with boiling water, soak for ten minutes. During this time chop the banana into slices and crush the walnuts into small bite sized chunks.
Once the water has been absorbed and the oats are soft stir in the banana, blueberries, raisins, almond milk, walnuts, cinnamon and agave.
Then place all the ingredients into your baking dish. I like to put a few slices of banana, a scattering of blueberries and raisins, and a handful of walnuts on the top to make it look pretty, but this is totally optional!
Then bake for 20 minutes, until the top has slightly browned.
Serve and enjoy!

I saw this recipe last night and made it as it sounded healthy – I had no idea it would taste this increadibly fabulous!!! I had no walnuts so instead I used pumpkin seeds and almond slivers and sprinkled all with linseed and quinoa. Also I used stevia instead of the agave, Absolutely gorgeous – I will be making this again…..and again!!

Hi Corinne. I’m so happy to hear that you had so much fun making it, it’s such a wonderful breakfast! To heat it up I spoon the amount I want into a saucepan with a little extra almond milk, stirring the milk in as it warms. It should take about 5 minutes. Hope that helps! Enjoy!

This is the most amazing oatmeal I have ever tried! Blueberry goodness with every bite. I used 2 tbsp. honey, and 1 tbsp. cinnamon instead of agave. I also didn’t use walnuts as my son is too little for those. This was a huge hit with my 20 month old, he is saying “mmmmmm” with each bite, and so am I!

Just tried this amazing recipe. I too, adjusted it a wee bit. Left out all sweeteners, added mixed berries and a sliced apple, reduced cinnamon to 1 tbsp (will increase to 2 next time) and a tad more liquid. The flavour mix was yummy. Thanks for such a great recipe. This is the perfect breakfast food on a cold Toronto day.

I only had roasted Saigon cinnamon and used 2 tablespoons of it but it is very strong! Otherwise this dish would be delicious but my mouth is now numb from too much cinnamon!

Thanks Emily! I actually have no idea about the calories, sorry. I’m not a fan of counting calories at all, I prefer to only eat foods that I know my body loves and needs and I’d never want to restrict myself with those! Sorry I can’t help more though!
How much water do you soak the oatmeal in?
I poured enough water to cover the top of the oats by a centimetre or two – hope that helps!

I love making this for breakfast! I bought a nice serving dish that can be put in the oven so I can just pour the mix in the dish, then bake and then refrigerate for the next morning! It’s so filling and sugar-free, just amazing!
Yesterday I poured some yogurt and raw cacao on top – prefect breakfast!

I substituted almonds for walnuts, cranberries for raisins. Used strawberry flavored agave and some sea salt. It looks quite a bit darker than your picture so wondered if 2 Tbl of cinnamon was right? But it tastes delicious! I will definitely be making this for family. A great spin on regular oatmeal.

That’s my kind of brekky! If I were to sub quinoa flakes instead of the oats, would that change the method of soaking them in boiling water first, does anyone know?
