Courgette pasta is one of my absolute favourite things, I make it all the time as it’s just so quick and easy yet still so satisfying and amazingly delicious! Since everyone loves it so much I thought it would be helpful to make a video to talk you through how to make it, both with and without a spiralizer so that everyone can eat this at home. The sauce for this dish is my favourite thing about it, it’s made with brazil nuts and avocado, which means it’s extra creamy! I then sauté lots of thinly sliced chestnut mushrooms and scatter them on top of the dish to add texture and extra flavour, it’s so awesome.
