This is the easiest snack ever! It’s so delicious and unbelievably moorish though, I can sit and eat bowls of this as I get through my day – the mix of toasted almonds and coconut chips with sweet raisins, coconut oil and vanilla is just amazing. This is a great thing to make if you struggle with finding healthier snacks, as it just takes a couple of minutes to throw together and then you can keep a box of it in a desk draw or handbag to keep yourself feeling energised and satisfied all day.
50g coconut chips
100g flaked almonds
2 tablespoons coconut oil
2 ½ teaspoons vanilla powder
Preheat the oven to 180C
Melt the coconut oil in a sauce pan and stir in the vanilla powder.
Place all the remaining ingredients into a mixing bowl and cover with the melted coconut oil and vanilla. Stir well until everything is covered.
Line a baking tray with baking paper and pour the mix onto the tray. Place the tray into the oven and bake for about 20 minutes until the almond have darkened and the coconut chips turn golden brown.
Once these are done, take them out of the oven and leave them to cool on the side for about 10 minutes, this helps the almonds become really crunchy!
