This recipe was the inspiration behind our on-the-go coconut & oat energy ball. We love to coat ours in desiccated coconut, to really enhance their amazing flavour.

  • 250g medjool dates
  • 30g sunflower seeds
  • 30g pumpkin seeds
  • 25g desiccated coconut
  • 10g date syrup
  • 55g gluten free oats
  1. Begin by placing the sunflower and pumpkin seeds in the food processor and pulsing until they are nicely crushed. Add the medjool dates, oats, desiccated coconut and date syrup pulse until it’s fully mixed. Take a tablespoon of the mixture and roll into a 40g ball. Continue doing this until the mixture is finished. We also roll ours in desiccated coconut after to make then look even more fun! Store in an airtight container in the fridge.
