This recipe was the inspiration behind our on-the-go cashew & ginger energy ball, which remains one of our most popular, having one a Great Taste award when it first launched. We love the balance between the spicy ginger, and the creamy oats and cashews.

  • 200g of cashews
  • 200g of dates
  • 2 heaped teaspoons of ground ginger
  • 50g of oats
  1. Pulse the oats and cashews in a food processor until they form a flour. Then pit the dates and add them to the food processor along with the ginger. Blend until everything has mixed together and formed a nice sticky dough. Roll the mixture into 12 equal sized balls and place in the fridge for an hour to set, then store in an airtight container in the fridge.
