Yellow Thai Curry

We make our Yellow Thai Curry in small batches by simmering wild mushrooms, red and yellow peppers, spinach and butternut squash with coriander, lemongrass and creamy coconut milk. We quickly freeze the dish to lock in the delicious flavours. All you need to do is pop the tray in the oven from frozen and it will be ready in 45 minutes. We have it at home with coconut rice, toasted cashews and fresh chilli for a simple, delicious dinner for two.
