Yellow Thai Curry
We make our Yellow Thai Curry in small batches by simmering wild mushrooms, red and yellow peppers, spinach and butternut squash with coriander, lemongrass and creamy coconut milk. We quickly freeze the dish to lock in the delicious flavours. We have it at home with coconut rice, toasted cashews and fresh chilli for a simple, delicious dinner for one.
