Peppers have a wonderful combination of tangy taste with crunchy texture that works so well in so many dishes. Red peppers are my absolute favourites, although orange and yellow ones are awesome too – I have to admit though that green peppers are one of the only veggies I don’t like, I just can’t seem to get on with their flavour, it just seems to bitter for me. I use the other shades of peppers all the time, which is awesome as they’re super good for you. I love them raw as dipping batons for dips and guacamole, chopped into pieces for quinoa bowls and cooked down into delicious sauces for pasta.
