We’re absolutely loving these protein-packed veggie meatballs at Deliciously Ella HQ at the moment. It’s the perfect back-to-school, or work, recipe to cosy up with as the evenings draw in. Both the meatballs and tomato sauce can be made ahead of time, meaning that all you need to do is cook the pasta.
If you prefer using uncooked quinoa, pour 50g into a small saucepan along with 100ml / 3.5 fl oz of water and a pinch of salt. Bring to the boil, cover with a lid and simmer for 8–10 minutes until all of the water has been absorbed.
