This is our take on the crispy rice bowls that recently took social media by storm. We’ve added sticky miso-tofu, lots of crunchy vegetables, chilli and zingy lime. It’s our favourite recipe for when you’re short of time but still want to eat something nourishing, and it's a great way to use leftover rice.

Ella’s Tips

If you’re cooking rice from scratch, let it stand for 10–15 minutes to allow the steam to be absorbed — this will help the rice crisp up in the oven.
