Banana Chocolate Chunk Pancakes

Satisfy your sweet cravings with our banana chocolate chunk pancakes. These deliciously fluffy pancakes are packed with sweet, ripe bananas, rich chocolate chunks, a drizzle of maple and a pinch of salt. With just 8 ingredients, they’re easy to make and you’ll have them on the table in just 15 minutes. Whether you're treating yourself on the weekend or surprising your loved ones with a sweet morning treat, these pancakes are guaranteed to be a hit.

Ingredients:

  • 12 oz self-raising flour

  • 1 teaspoon chia seeds

  • 2 tablespoons coconut oil

    melted (+ extra for cooking

  • 13.5 fl oz plant-based milk

    (we used soya milk)

  • 2 tablespoons maple syrup

    (+ extra to serve)

  • 3.5 oz 70% cocoa dark chocolate

    roughly chopped

  • 4–5 bananas

    sliced into 1cm / .25” thick rounds

  • pinch of sea salt

Method:

    Sift the flour into a large bowl; stir in the chia seeds and salt.

    Make a well in the middle of the flour, then pour in the coconut oil, plant-based milk and maple syrup; gradually mix to form a smooth batter. Fold through the chocolate and set aside for 5 minutes to thicken.

    Warm ½ teaspoon coconut oil in a large frying set over medium heat. Add 1–2 spoonfuls of batter and top with 4–5 slices of banana. Cook for 3–5 minutes, then flip and cook for another 3–5 minutes, until the banana is golden and caramelised. Repeat with the remaining mixture — you should be able to cook 3–4 pancakes at a time, depending on the size of your pan.

    To serve, divide the pancakes between plates and drizzle over a little maple syrup (to taste). These pancakes are delicious as they are or served with coconut yoghurt and fresh berries.
