Super Quick Sun-Dried Tomato Pasta

Roasted almonds blended with sun-dried tomatoes, balsamic, roasted garlic and almond milk to make a thick, creamy sauce, which we toss through pasta. It literally takes fifteen minutes from start to finish, perfect for a delicious weeknight supper. You can always double the sauce and freeze a batch to make it even quicker another day.

Ingredients:

    ingredients
  • 300g dried pasta

    (4 servings)

  • 100g sun-dried tomatoes

  • 100g roasted almonds

    chopped

  • 2 tablespoons tomato purée

  • 1 tablespoon balsamic vinegar

  • 2 cloves garlic

    roasted

  • 300ml almond milk

  • pinch of sea salt

Method:

    Cook the pasta as per instructions on pack. Once cooked, drain and pour back into the pan.

    Place the rest of the ingredients into a blender and pulse until smooth, adding more almond milk if needed until you reach the consistency you like best.

    Pour the pasta sauce over the pasta and heat through.
