Pear, Walnut & Oat Crumble

A delicious twist on the classic fruit crumble, made with soft, sweet pears, combined with a crunchy topping of oats, walnuts and an indulgent touch of dark chocolate. Perfect with a dollop of coconut yoghurt or vegan ice cream. Heaven!

Ingredients:

    for the filling
  • 8 small ripe pears

    peeled & cut into bite-sized pieces

  • 1 teaspoon vanilla bean paste

  • 1 tablespoon coconut sugar

  • 1 lemon

    zested & juiced

    for the crumble
  • 150g spelt flour

  • 150g jumbo oats

  • 1 tablespoon coconut sugar

  • 50g walnuts

    roughly chopped

  • 30g 70% cocoa dark chocolate

    (about 3 squares) chopped into small pieces

  • 4 tablespoons olive oil

  • 2–3 tablespoons water

  • pinch of flaky sea salt

Method:

    Preheat the oven to 160°C fan / 350°F. Put the pears in a saucepan along with the vanilla bean paste and coconut sugar. Set over medium heat and cook for 10 minutes, stirring frequently, until softened but still holding their shape. You’ll know the pears are ready when they begin sticking to the base of the pan. Stir in the lemon juice and zest, then pour into a small ovenproof dish (roughly 23 x 15cm / 9 x 6″).

    While the pears are cooking, add the flour, oats, sugar, walnuts, dark chocolate and a small pinch of salt to a bowl; pour in the olive oil and water and bring everything together with a spoon.

    Scatter the crumble over the cooked pears and bake for 30–35 minutes until golden and bubbling. Serve with a dollop of coconut yoghurt or vegan ice cream.
