Mixed Tomato Salad

This salad is a beautiful addition to any meal, the colours are stunning and it's so simple to make. The mix of juicy tomatoes taste delicious with the sweet peppers and pomegranate seeds, while the coriander adds a really nice freshness and the dressing brings it all together.

Ingredients:

    For the salad
  • 500g mixed baby tomatoes

    a mix of colours and shapes

  • 4 spring onions

    thinly sliced

  • 1 yellow pepper

    chopped

  • 1 large handful pomegranate seeds

  • handful of coriander

    roughly chopped

    For the dressing
  • 3 cloves garlic

    peeled & chopped

  • ½ lemons

    juiced

  • 1 tablespoon apple cider vinegar

  • drizzle of olive oil

  • pinch of sea salt

Method:

    Start by preparing the salad ingredients; halve the tomatoes and place in a mixing bowl, chop the spring onions, pepper and coriander and place in the bowl along with the pomegranate seeds.

    Make the dressing by mixing together all of the dressing ingredients, before adding to the bowl.
  3. 3

    Give everything a good stir before serving.
