Lemon & Poppy Seed Loaf

This sweet lemon & poppy seed loaf makes the perfect light breakfast or snack to have with an afternoon cup of tea.

Ingredients:

  • 200g ground almonds

  • 250g plain flour

    we use gluten-free

  • 2 tablespoons of poppy seeds

  • 2 teaspoons baking powder

  • Juice and zest of 1 lemons

  • 200 ml maple syrup

  • 200ml almond milk

Method:

    Preheat the oven to 180°C/ 160°C fan / 350°F. Grease and line a 1lb loaf tin and set aside.

    Place the ground almonds, flour, poppy seeds, baking powder and lemon zest in a bowl and whisk to remove any lumps.

    Pour int the lemon juice, maple syrup and almond milk and whisk until you have a batter, being careful not to overmix.

    Pour the batter into your prepared loaf tin and bake for 40-45 minutes until golden brown, risen and firm to the touch. If in doubt, insert a small skewer or toothpick - if any pieces of wet crumb come out put it back into the oven for a further 5 minutes.

    Allow to cool completely before slicing. Once kept in an airtight container this keeps well for up to four days.
