Making a big batch of soup is a great way to use up any leftover veg from the week. We recommend making extra and freezing individual portions so you can always have an emergency lunch stashed away.
The ingredients here are approximate and that is intentional, as the size of vegetables varies it is hard to predict exactly how much you have left. You also may not have made all the recipes in the meal plan, meaning you will have different leftovers, which is also totally fine!
If you don’t have leftover cannellini beans, you can open one and use a whole tin, or leave them out altogether. If you haven’t made the bechamel sauce, you can add some oat milk or coconut milk, or leave it out altogether.
