This twist on the traditional family favourite is a celebration of different textures and flavours, thanks to the chickpeas, mushrooms, miso and almond butter. It’s not lasagne as we know it, but we do know that you will love it.
For a gluten free version, use gluten free flour and lasagne sheets. This lasagne freezes well: simply wrap in aluminium foil and freeze, then defrost fully to room temperature before baking as per the instructions. This recipe is also easy to double, so why not make one now and one for the freezer?
