This is such a fresh, delicious salad, packed full of amazing texture. The crunchiness of the roasted almonds contrasts perfectly with the softness of the baked aubergine. We love ours served alongside a spoonful of sauerkraut and our beetroot hummus, but it is equally delicious by itself!
