View RecipePancakes are one of my favourite weekend breakfasts, and my girls love helping to make a big batch on Sunday mornings. Whilst the recipes we use are super simple, pancakes always feel a little special which makes a change from breakfast in the week which is, more often than not, a bit of a rush!
We tend to switch up our Sunday morning pancakes week-to-week with some special toppings, such as sticky maple peaches, homemade compote, or coconut yoghurt and a sprinkling of nuts for a delicious crunch. A personal favourite are the American-style pancakes – they’re thick and fluffy and taste deliciously sweet with the fresh blueberries added to the pancake mix.
Savoury pancakes are also ideal if you’re after a brunch idea or simple dinner. Try bases of chickpea and potato, spinach, or buckwheat to up the nutritional content of these pancakes. Here, too, toppings make the world of difference to level up your plate – I love garlicky mushrooms, pesto and juicy tomatoes, or roasted veggies.
