Baked Banana, Blueberry and Raisin Oatmeal

I don’t even know where to start explaining how insanely delicious this is. Oh my god, you have no idea, it is unbelievable. So soft, gooey, sweet, creamy, just wow so delicious. The beauty of this dish is the way that it is cooked as baking it really allows the fruit to really melt into the oatmeal. The bananas blend so perfectly with the oats and cinnamon, to give each bite a sweet, fruity taste. While the blueberries literally burst in your mouth, like little balls of delicious sweetness! They’re wonderfully complemented by the raisins, which become so big and juicy when baked that they add all the sweetness this dish could ever need. I like to add walnuts too for a little crunch, it’s nice as it spices up the texture a little to give you a bit of everything! This really is the perfect healthy brunch dish, I promise everyone will love it. It really tastes like dessert! It’s so warming too, which makes it awesome for these cold winter months. I’m even thinking of making it for Christmas morning! You can prepare it the night before and just leave it in the fridge over night too, which means no effort in the morning.

Serves 2:

– 1 cup of gluten free oats

– 1 cup of blueberries

– 1 and a 1/2 ripe bananas

– 1/2 a cup of raisins

– 1/4 a cup of almond milk

– a handful of walnuts

– 2 tablespoons of cinnamon

– 1 tablespoon of pure maple syrup (optional)

Start by pre-heating the oven to 190C.

Place the oats in a bowl and cover them with boiling water, soak for ten minutes. During this time chop the banana into slices and crush the walnuts into small bite sized chunks.

Once the water has been absorbed and the oats are soft stir in the banana, blueberries, raisins, almond milk, walnuts, cinnamon and maple syrup.

Then place all the ingredients into your baking dish. I like to put a few slices of banana, a scattering of blueberries and raisins, and a handful of walnuts on the top to make it look pretty, but this is totally optional!

Then bake for 20 minutes, until the top has slightly browned.
