Almond and Honey Breakfast Puffs
These almond and honey breakfast puffs are our go-to speedy breakfast staple at home. I love throwing them in a bowl of coconut yoghurt and berries, which I can wolf down quickly before I run out the door in the morning. They remind me a little of sugar puffs, which used to be a favourite of mine!
120g of brown rice puffs
3 heaped tablespoons of almond butter
2 tablespoons of coconut oil
2 tablespoons of runny honey
2 teaspoons of vanilla powder
Tiny pinch of salt
Pre-heat the oven to 180C
Place the puffs in a large bowl and set aside. Then place all the remaining ingredients into a saucepan and gently heat them until a liquid forms
Stir the mix over the brown rice puffs and mix well, before transferring everything to a baking tray
Bake for about ten minutes, until the puffs are crispy
Leave to cool, then store in an airtight container and enjoy!
