Raw Raisin and Ginger Nut Bars

These are little squares of heaven. Seriously I could not recommend them more. The combination of dates, almonds, pecans, raisins and ginger is just delicious, and even better they take just 5 minutes to make.

Makes 14 bars

– 3 cups of medjool dates (the dates really do need to be medjool as otherwise they’re not sticky enough to bind the nuts together)

– 1 cup of pecans

– 1 cup of almonds

– Β½ a cup of raisins

– 1 tablespoon of ginger

Simply place all the ingredients, except the raisins, in a food processor and blend until they form a sticky nutty deliciousness. Remove from the blender and add the raisins, mix them into the mixture – it’s easiest to do this with your hands as its too sticky for a spoon. Once everything has been added place the mix onto parchment paper in a baking tray, spread and pat down with a spatula. Either freeze for an hour or refrigerate for three to four. They’re best kept in the fridge too, but this isn’t essential by any means.
