Raw Raisin and Ginger Nut Bars
I’ve been making these ginger and raisin oat bars for the last five years or so. They take just five minutes or so to make and they make the most perfect mid-afternoon snack. I love the mix of roasted cashews and almonds with ginger, it gives a fiery flavour, which is then softened by the sweet dates and raisins.
12 Medjool dates, pitted
130g roasted almonds, 1 cup
130g roasted cashews, 1 cup
160g raisins, 1 cup
1 tablespoon ground ginger
Place the nuts in a food processor and pulse until a powder forms, around 5 minutes. Add in the dates, ginger and half of the raisins and pulse again until a paste forms. Once well combined, add in the final raisins and pulse quickly to mix through.
Spoon the mixture into a lined baking tray and push down well to ensure the mixture is evenly spread. Place in the freezer for 30 minutes to set. Once set, cut into equal bars and store in the fridge.
