Video: How to Make Courgette Pasta

Courgette pasta is one of my absolute favourite things, I make it all the time as it’s just so quick and easy yet still so satisfying and amazingly delicious! Since everyone loves it so much I thought it would be helpful to make a video to talk you through how to make it, both with and without a spiralizer so that everyone can eat this at home. The sauce for this dish is my favourite thing about it, it’s made with brazil nuts and avocado, which means it’s extra creamy! I then sauté lots of thinly sliced chestnut mushrooms and scatter them on top of the dish to add texture and extra flavour, it’s so awesome.     Dear Ella,
    I just made your amazing courgette pasta for dinner and my mum was in awe of how simple and delicious it was! We both loved the dish – very yummy. Also I didn’t have a spiralizer but found that if you turn a box grater on its side and use one of the larger grating settings (bigger holes), you can run the courgette along that and easily produce strands of courgette pasta (although it was flat).
    Can’t wait to try another of your recipes and thanks for the easy video.

    i understand that you don’t eat meat and i was wondering is meat bad for your health or could you still have it and still be healthy?

    Hi, it’s really difficult for me to advise as everyone is different and has different dietary requirements. For me, I don’t feel great when I eat meat, my energy is always low as I find it very difficult to digest. This is why I prefer a plant-based diet. I think ultimately it’s all about how your food makes your feel and responding to what your body craves. Have a lovely day, Ella x

    Tried this today for lunch, it was absolutely delicious!! The mushrooms gave it so much flavour. I actually dressed it with homemade basil pesto (as I’m not an avocado fan) and it turned out amazing.

    Hi Ella, I have just tried this and it was delicious although think I did a bit too much pesto for one person! (It might not be feasible but maybe you could have a section on your site for “recipes for 1″) I have a Magimix but could still taste bits of Brazil nut – did I perhaps use too many or maybe I should have added liquid?

      Make sure you blend the brazil nuts until they create a really creamy consistency. You then need to add the other ingredients and the water gradually until it creates a sauce. The pesto freezes well so you could always freeze it and enjoy it throughout the week too! Have a lovely day x

    Hi Tim, I would recommend lightly sauteeing the courgette noodles if you want them warm. Courgette is naturally really soft so boiling it like regular pasta will probably cause it to fall apart. Hope you enjoy it! X

      Yeah thought so. I guess there’s still a risk of them getting a bit squishy even when frying; is there anything you could do as well when frying to almost help them get crunchier? But not too the degree of courgette fries

        Roasting is usually best to get things crunchy however I have never tried roasted courgette spaghetti before. Hope it turns out delicious! X
