Summer has finally arrived in London, which means it’s time to explore more seasonal recipes and this juice is the perfect way to start. It’s taste is simply heavenly and totally reflective of the beautiful weather. The cool mint blends perfectly with the refreshing cucumber, sweet apples and juicy pears to create a wonderfully light, refreshing and energising juice. It’s the perfect remedy for a hot day. Even better, fresh mint contains amazing healing properties which soothe and aid digestion. It’s my new go-to breakfast juice. I’d really recommend trying it with you breakfast in the morning, it’s the perfect addition to anything and everything and a really easy way to boost your morning vitamin intake with lots of amazing life-giving chlorophyll from the greens! It also takes a minimal amount of time to juice, no more than 3 or 4 minutes – just as long as your toast takes to cook. I’m loving it alongside fresh berries and gluten-free toast with almond butter and sliced banana. Breakfast never tasted better.
- 4 red apples
- 4 pears
- 1 cucumber
- 1 cup of fresh mint leaves
Simply place all of the ingredients into your juicer and watch the deliciousness pour out. My only recommendation would be to juice the mint leaves at the same time as the cucumber, apples or pears as that way you’ll get more mint juice.
