Cashew and Vanilla Butter

I’m having a real obsession with vanilla at the moment, I just can’t get enough of it so I’m putting it into absolutely everything I make. I tried blending it into cashew butter this week and it’s hands down one of the best things I’ve eaten in a very long time. Homemade cashew butter is so much yummier than the ones you buy as the texture is smoother and creamier, then once you put the vanilla into the mix everything is taken to the next level and you end up with a jar of heaven. Honestly it’s outrageously good. It tastes and smells like cake mix and I’m currently sitting here eating it straight out the food processor with a teaspoon – you guys just have to go and make this as soon as you can. I know I say this a lot, but this recipe really is the best! You can add it to toast, dip dates into it, drizzle it on porridge, blend it into smoothies, add it to banana ice cream and just eat it straight from the jar as a snack!

Makes One Large Jar

– a baking tray of cashew nuts (about 400g)

– 2 teaspoons of vanilla powder

Pre-heat the oven the 180C, then once the oven is hot place the tray of cashews in to bake for about ten minutes – until they start to go golden brown but aren’t burnt.

Take the cashews out the oven and let them cool.

Once cool place them in a food processor with the vanilla powder and blend for about ten minutes, until the mix is totally smooth and creamy. It’s so tempting to stop blending once it gets sticky but let it keep going until it’s runny, trust me – it’s so worth the extra few minutes!

You do need a really strong processor, like a Magimix to do this sadly, a weak one won’t make it totally smooth.

    Spring might be THE time for vanilla? Some days ago I made you “cashew-almond-yoghurt-creme” (still one of my many all time favourites) and put a huge amount of vanilla in it. So good!
    And I definately have to try this butter, so far I´ve always only made almond butter (with just a little bit of vanilla).

    Hi Ella, I just looked up vanilla powder online and it looks like it’s vanilla blended with sugar and corn starch. Do you think fresh vanilla or pure vanilla extract will work? Thinking it might be a healthier alternative and also much easier to get hold of at short notice (I want to try this right now!). Caz

      Hi Laura, it’s best kept in an airtight jar at room temperature. I buy vanilla powder online from Amazon or Ocado. It’s best to make it in a food processor rather than a blender otherwise it won’t become smooth and creamy. It should keep for about 2 weeks. Really hope you love it! X

    Yum! My food processor is only 500 W but i made deliciously smooth cashew butter last week – so even if your food processor isn’t the strongest you should still be able to do it, just keep it in a little longer :) Can’t wait to try it with the vanilla powder!!

      Hi Nicole, I wouldn’t recommend making nut butters in a blender as blenders often need liquid in order to function. The food processor helps to create a really soft and smooth texture! X

    Hi Ella! this recipe sounds wonderful! But it’s necessary to bake the cashews? What about using them raw? I prefer not baking nuts, because of their good fats becoming bad fats with the heat…
    I have another question, I want to buy a good processor, Magimix seems to be the best option…but it also slices very thin? ( for example a cabagge to make “sauerkraut”), because the other option could be a Thermomix ( more expensive than Magimix, but a very powerful machine that also cooks). What do you think?     I just made this and it was an instant hit! Didn’t have any vanilla powder but used a whole bean instead and scrapped out the innards. Delicious!! And so easy. I think I might make most of my “butters” now :p You’re right..so worth it to wait the extra few minutes, too.

      Hi Catherine, I’m so happy you love the book! All the recipes are full of nutrients and goodness, they’re not really geared towards calories counting or weight loss specifically. If you would like to lose weight I wouldn’t recommend baking or having baked treats every day, even though they are nutrient dense.     I just finished making your cashew and vanilla butter with vanilla extract instead of the powder. The flavor is amazing but the texture is not so good. If all I had needed was a small amount it wouldn’t have effected the texture at all but in order for the vanilla flavor to come through I had to add a lot. It went from being a wonderful creamy texture to a very grainy texture. I added a spoonful of raw honey hoping that would bring back the creaminess but no such luck. I will be ordering the vanilla powder soon so that I can make it again. Thank you for this recipe! I am confident that next time it will be perfect. Valerie

    This is absolutely *amazing*! Heaven in a jar might be an understatement. This was my first go at making homemade nut butter and it so far surpasses any store-bought variety (even the most expensive ones). I am going to have to restrain myself from eating the whole jar with a spoon!

    A note: my KitchenAid food processor worked brilliantly. I had to scrape down the sides a couple of times in the first few minutes, but after that I just let it work its magic for the full 10 minutes and the final product was silky, smooth and buttery.

    If you keep blending the mixture for a good 10 minutes it will eventually turn into a really smooth and creamy butter texture, without any liquid needed. This creates a slightly different consistency to the other nut butter recipe, both really delicious! X

    Hi Lucy, sadly not as the nutribullet is a blender which generally requires liquid in order to function, rather than a food processor which can grind the cashews into a butter.       Thankyou Ella, I will have to save my pennies :) I want to say a huge, massive, gigantic thankyou for what you have done for me too. I’m 25 and have polycystic ovaries. We have tried ivf with no results yet. I find myself constantly bloated and having to contend with a new body as the pill was previously masking my symptoms. I’ve tried loads and nothing helps. I found your book and it’s changed everything, I’m eternally grateful. I love the freshness of all the food. I thought it would be hard but I tried a sugary drink at a party recently and couldn’t believe how ridiculously sweet it was and now I don’t crave it at all.     Hi Sylvia, I haven’t actually tried freezing the nut butter before but I imagine that the consistency wouldn’t work well once it’s been defrosting. The nut butter lasts for several weeks in an airtight container at room temperature so you will have it for a while :) Hope you love it x

    Hi, this isn’t something I have come across before. You are only baking them lightly for 10 minutes. This really brings out the flavour and helps them to blend much more easily. Sadly I haven’t tried this recipe raw before so I’m not too sure how it would turn out x

    Hi Hope, I just use pure organic vanilla powder which I buy from Amazon or from my local health food store. Instead of cacao butter you could try using melted coconut oil instead! So happy you’re loving lots of the recipes! Keep up your healthy journey x

    Vanilla extract tends to be really processed and usually contains additives, and I sadly wouldn’t know about the ratio and flavour if it, whereas vanilla powder is really pure and natural. You can find it on Amazon or in most health food stores. Hope you love this recipe x
