Raw cacao and walnut truffle bites: gluten free, dairy free, sugar free

These decadent cacao and walnut truffles are like small bites of heaven. They’re insanely delicious, just so unbelievably rich, gooey chocolatey. Filled with crunchy bites of walnuts, hazelnuts and chia and subtle hints of coconut oil and cinnamon. Just wow. So many incredible flavours in each mouthful. I love the texture too, it’s so moist that they seriously melt-in-your-mouth. I’m yet to find someone that doesn’t love them. I’m totally obsessed. I have to admit the first time I made them I ate more than half of them within the first hour! They just really sate any desire for something sweet and leave you glowing with happiness as you feel light and energetic not nauseous and stuffed like after an overdose on commercial chocolate! It’s always really fun to indulge on something so sweet and delicious without worrying about any consequences either to your waistline, or in my case my over active, very sensitive heart!

It’s a little hard to believe that they’re so healthy. It almost seems bizarre to think that chocolate truffles could contain any goodness, but trust me these are packed with awesomeness. All the ingredients contain huge amounts of plant protein, fibre and vitamins, as well other fantastic properties from the healing anti-bacterial lauric acid in the coconut oil to the rich sources of calcium in the chia seeds and the amazing ability of cinnamon to balance your blood sugar. I could seriously ramble on for pages about all the goodness provided by one bite of these! Especially about the insanely nutritious nature of walnuts with their vast supply of the all-important omega 3 fatty acids and their anti-inflammatory properties, both of which are fundamental for any healthy body. As well as the super food nature of raw cacao powder which is packed with more antioxidants then anything else, far more than berries and green tea for example, which is pretty exciting. Now you can fall totally in love with chocolate again.

Makes 25 truffles

- 2/3 of a cup of walnuts

- 2/3 of a cup of hazelnuts

- 3 tablespoons of cacao

- 1 tablespoon of almond butter

- 3 tablespoons of coconut oil

- 2 cups of dates

- 2 teaspoons of cinnamon

- 2 tablespoons of agave syrup

- 1 tablespoon of chia seeds

This one has an amazing flavour and works better than any other I’ve tried in cooking, it’s really fantastic. It takes a long time to work your way through a jar too so it ends up being great value. Likewise this choc chick raw cacao powder also takes forever to get through and so ends up being much cheaper than any store bought cadburys etc coco powder! It also tastes a trillion times better and is exponentially better for you.

Simply place all the ingredients into a food processor together and blend for about 5 minutes until a gooey, sticky mixture forms. Don’t allow the walnuts and hazelnuts to become totally smooth as their little crunchy pieces really adds to the texture.

Roll the dough into little bite sized balls using your hands then refrigerate over night.

Bite and love. The perfect post dinner indulgence.

    • Sadly I don’t think the nuts will process enough in the blender, although probably worth a try! I’d really recommend investing in a blender though – you an find good ones that are quite reasonably priced, mine for £50 and has been my best ever kitchen investment!
